Grilled BBQ Chicken

Well food blog, it's been a while since I have posted. It's been a crazy past few weeks, but I think we are now back on schedule.
So this isn't much of a recipe, but it was such a quick and easy meal for us tonight since I had to go to work twice today.

Grilled BBQ Chicken
2 chicken breasts
Sweet Baby Ray's BBQ sauce

That's it.
Easy peasy. 

So when I left for work this afternoon I just laid 2 chicken breasts out to thaw. When the husband got home, he marinated them for about 30 minutes in the BBQ sauce (definitely tastes better if you can marinate them longer) Then he threw them on the grill for about 30-45 minutes, flipping them occasionally.
Then we are super lazy with mashed potatoes, but we love the Idahoan brand of instant mashed potatoes. So I made some of those real quick and some broccoli.
So simple. But yet so yummy.
Also, the mashed potatoes are good with a little bit of cheese on top. Or if you're like my husband, you put a lot of cheese on top.

yup. when you are in a hurry you get to use paper plates. keepin it classy folks.

Slow Cooker Sesame Ginger Chicken with Pineapple

This is something I just put together over the weekend. It was quick and easy and quite tasty. 

2 chicken breasts
Kroger sesame ginger marinade 
1 8oz can of pineapple tidbits 

Throw it all in your slow cooker and cook on high for about 4-6 hours, ours finished in a little over 4. Or you can cook it on low for 6-8 hours. 
After it was finished cooking we just served it over white rice.
And there you have it, a quick easy meal for 2!



*one thing Nick pointed out, try adding your pineapple the last hour of cooking or right before. Ours didn't taste too much like pineapple cause it cooked the whole time. Or try fresh pineapple.*

Grocery Shopping

Grocery shopping.
Not a fan. At all. For some reason I dislike grocery shopping. But it has to be done, and it's more fun when you have a good list, and a meal plan.
I've been trying really hard to have a meal plan set each week. Which has made grocery shopping easier for us. 
I get my grocery list from Pinterest, off of my food/recipes board. 
I just look through the different recipes I have pinned and see what sounds good for the week. 
It's actually made grocery shopping and meal planning more fun. I've found a lot of good recipes off of Pinterest. 
So thank your Pinterest, for all your fun food ideas and making grocery shopping a little bit more bearable for me!

Taco Soup

Fall is quickly approaching, which means soup weather!
Tonight I decided to make Taco Soup for the husband and I.
My mom makes the best taco soup, so I just went off of what I thought she does and did my own thing as well.

1/2 pound of ground beef
1/2 yellow sweet onion
1 package of taco seasoning
1 16 oz can of chili beans w/liquid 
1 15 oz can of kidney beans w/ liquid 
1 15 oz can of garbanzo beans w/liquid 
Frozen corn (I'm weird, I don't like canned corn, so I didn't measure the corn)
1 8 oz can tomato sauce
1 14.5 oz can of diced tomatoes
2 cups of water
1 package of taco seasoning mix 

In a skillet, cook your ground beef until brown. Drain and set aside.
Place the ground beef, onion, chili beans, kidney beans, garbanzo beans, corn, tomato sauce, diced tomatoes, water and taco seasoning in slow cooker. Stir to blend ingredients. Cook on high for a few hours. You can cook this in a pot very easily, but the slow cooker was very convenient today. :)
I like to top my soup with cheese, sour cream and fritos. Nick likes to top his with lots of cheese and sour cream.
And of course, it's soup... LEFTOVERS! This soup freezes really well. So we froze some and Nick can take some to work tomorrow.

Slow Cooker Taco Chicken Bowls

This is hands down one of my favorite meals.
I found this on Pinterest and it took me here.
I tweaked the recipe a bit myself, but it is so easy, and so yummy.

2 chicken breasts
1 can of black beans 
Frozen corn (I didn't measure, I just poured it in)
Cilantro
Green Onion
Then I just added some spices:
ground cumin
chili powder
garlic salt
and pepper.
Probably about a tablespoon of each.
{Side note, I don't always measure. Terrible, I know, I will do better!}
Then also, you can either add salsa or I added  1 can of green chile enchilada sauce. 

Add this all in a slow cooker and I cooked it on high for 6 hours.
Then shred your chicken, you can shred it in your crock pot and serve over white rice.
We like to top it with cheese and sour cream and dip tortilla chips in it.
We ended up having enough to save and made them into quesadillas the next night. They tasted just as good the 2nd night.

Welcome to Cooking for Two!
I'm really excited to start this blog, I've always wanted to have a food blog, but I've always been too nervous to do it.
My husband and I have been really bad at cooking at home since we have been married. Our excuse was always "we are too busy" "we are too tired" and the famous "it's too hard to cook for two people"
And I understand 100%. It really can be hard. But our excuses are no longer valid. We are now homeowners and need to pinch pennies anywhere we can. Cooking at home has already saved us money. And it's been so fun to cook at home and enjoy meals together at the kitchen table. 
We try to cook meals that is the perfect amount for the two of us, or some that are great for leftovers the next night.
So with that being said, enjoy our recipes! We know we do!
